Slow-Cooker Black Bean Soup
I love my slow cooker. It is the ultimate staple for a lazy kitchen.
- 1 pound of dried black beans, soaked overnight
- 1 large onion, chopped
- 2 bell peppers, chopped
- 1 large carrot, finely shredded
- 3-4 chilis in adobo, chopped
- 1 tablespoon adobo sauce from can
- 1 can of diced green chilis
- 4-5 cloves garlic, minced
- 2 cups frozen corn
- 3 tablespoons of taco seasoning, I buy mine in bulk from Whole Foods
- 5 cups of water or vegetable stock
- 2 cups tomato juice
- salt to taste
Throw everything in a slow cooker on low for 8-10 hours. Garnish with limes, tofutti sour sream, fake cheese, cilantro, pickled jalapenos, avocado, or tortilla chips.
