Seitan Stir-Fry with Grilled Pineapple and Broccoli
- 2 tablespoons grapeseed oil
- 1 tablespoon seasame oil
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, cut into strips
- 8 ounces of seitan, store bought or homeade, cut into bite-sizes peices
- 3 cloves garlic, minced
- 1 cup shitake mushrooms, sliced
- 1 head of broccoli, stems removed and steamed
- 1 grilled ginger pineapple, cut into bite-sized peices
- mess load of cooked brown rice
- soy sauce and sweet chili sauce to taste
Heat oil in a large skillet or wok over medium-high heat. Saute ginger, bell pepper, and seitan for five minutes, then add mushrooms and garlic, cooking those an additional four/five minutes. Toss in steamed broccoli and grilled pineapple. Sereve over brown rice with soy and sweet chili sauce.
You don’t have to steam your broccoli first if you don’t want to, I’m just a weirdo about the texture of my broccoli. If you want to saute it with the rest of the ingredients like a normal person that’s totally fine.
