Smoky Beans and Greens Soup
- 2 tablespoons olive oil or Earth Balance
- 1 white onion, diced
- 4-5 stalks of celery, diced
- 3 cloves of garlic, minced
- 2 cans of great northern beans
- 1 cup of corn, fresh or frozen tastes best
- 1 can fire-roasted diced tomatoes
- 3 cans veggie stock
- 3 tablespoons tomato paste
- 1/4 teaspoon liquid smoke
- 2 teaspoons cajun seasoning, I like Ragin’ Cajun because they don’t use MSG
- 2 big handfuls of collard greens, torn into bite-sized pieces and tough parts removed
Sautee onion, celery, and garlic in olive oil in a good soup pot until tender. Add everything else, but the collard greens, and bring to a boil. Add collard greens and reduce to a low simmer. Cook for 30 minutes. Enjoy.
I’m not trying to be bossy or anything, but you should eat this soup with cornbread and hot sauce. It tastes way better like that. Just saying.
